Okay Jody, you have me inspired! I just finished the Fork Over Knives documentary…and I am already thinking of what I could do to change our diet. It will be small steps, but I’m excited! I do have a question though, are there any tips on reading the nutritional labels and ingredients? Things to look for? Thanks!
LOVE the quinoa and veggies! And you can do so many things with that–different veggies, spices. Next up is the cranberry/nut quinoa and the red pepper hummus, also the hummus/tomato/avocado wrap. ALL good for quick work lunches! And the black bean burgers, and…and…and…

Quinoa and Black Bean Wrap
Ingredients:
Quinoa
Hummus
Tortilla
Avocado
Lettuce
Black beans
Preparation:
Cook quinoa as directed on package. (I like to add a little Greek Spice to the quinoa while it cooks). Spread hummus on your favorite tortilla (The Onion Chili tortilla from Trader Joes is amazing!). Add the quinoa, black beans, avocado, and lettuce to your tortilla with hummus. Wrap up and enjoy! This is one of my favorite lunch wraps. It is so filling and delicious!
