Jill’s Corn and Avocado Salsa

Ingredients
  • 3T Olive oil
  • 2T fresh lime juice
  • 1/4c chopped cilantro
  • 1/2tsp Salt
  • dash pepper
  • 1 bag frozen super sweet white corn (you could use 4-5 ears of corn)
  • 1 1/2 cup diced avocado
  • 1 pint cherry tomatoes (I use the really sweet grape ones that wal-mart carries)
  • 1/4c finely diced red onion
  • 1 can black beans drained and rinsed
Preparation
Mix all ingredients in a large bowl.  Serve with pita chips or tortilla chips.
Try it sometime, it is wonderful!
