Allison’s Quinoa and Black Bean Wrap

Here is another recipe Allison has shared with us out of her lunch favorites.

Ingredients:
Quinoa
Hummus
Tortilla
Avocado
Lettuce
Black beans

Preparation:
Cook quinoa as directed on package. (I like to add a little Greek Spice to the quinoa while it cooks). Spread hummus on your favorite tortilla (The Onion Chili tortilla from Trader Joes is amazing!). Add the quinoa, black beans, avocado, and lettuce to your tortilla with hummus. Wrap up and enjoy! This is one of my favorite lunch wraps. It is so filling and delicious!
