Cajun Corn Pasta with Soy Chorizo
Ingredients:
1 c. sliced fresh Brussel sprouts
1 c. sliced fresh mushrooms
½ pck. Soy chorizo (Trader Joes has some that is fantastic!)
1 pck. Corn pasta or any pasta you like
Cajun Seasoning
¼ c. water
Olive oil (as needed)
Preparation:
Cook pasta according to package directions. Add water to a pan with brussel sprouts and mushrooms. Sautee until water cooks out or until vegetables are tender. Remove chorizo from casing and add to vegetables. Add Cajun seasoning (to your taste) to veggie and chorizo pan and continue cooking until chorizo is warm. Add vegetable mixture to pasta and mix. If you like, you can mix a little olive oil in your pasta before serving if you feel that it is too sticky.
I served this with Red Cabbage salad, bread and broiled asparagus. It was a big hit with my husband! Enjoy!
Red Cabbage Salad
Ingredients:
½ head of red cabbage, sliced
1 small red pepper, chopped
½ c. broccoli, chopped
½ c. carrots, chopped
Salt and pepper
Preparation:
Mix all ingredients together and mix with your favorite salad dressing or olive oil and vinegar. Add salt and pepper to taste. Enjoy!
Jody, I had asked a question re: what your research had found about vegan vs. Paleo. I just read a newsletter by Mark Sisson and thought it might interest you as well. http://www.marksdailyapple.com/lifelong-health-starts-here/ I really would be interested to hear your take on things. Thank you!
Stephanie, I do not know much about Paleo, I read the newsletter and agreed with some of his statements like we should not consume refined sugars, high fructose corn syrup and white refined grains. I also agree our ancestors did not live on vegetables alone but also this world is not the world they lived in. Pollution, pesticides, fertilizers, smoke and antibiotics are some of the things they did not have affecting their foods and water.
I have been ready the “China Study” and I would like you to check out this article I found that explains more on the study and more of why we have made the choice to change our diet. The article is from Happy Healthy Life.
